Strawberry Doughnuts for kids

Ingredients

  • 3/4 cup milk

  • 1/4 cup sugar

  • 1/2 tsp salt

  • 1/4 cup butter

  • 3/4 cup warm water

  • 1 tsp sugar

  • 2 1/4 tsp (1 packet) yeast

  • 1 egg

  • 4 1/2 cups flour

  • 1 TBS coconut oil

  • 2 cups powdered sugar 

  • 1 tsp corn syrup

  • 1/8 tsp salt

  • 2 TBS heavy cream

  • 6 strawberries 

  • Vegetable for deep frying

Directions 

  1. Add warm water to a small measuring cup and add 1 tsp sugar and yeast. Whisk together and let sit for 10 minutes. 

  2. In a small pot, heat milk over medium heat for 3 minutes. Add sugar, salt, and butter and allow butter to melt. Whisk together. Cool until it feels like a warm bath and doesn’t burn. 

  3. In the bowl of a stand mixer or a large bowl, add milk mixture and yeast mixture. Add the eggs and blend. Add 1 cup of flour at a time and mix on low with the dough hook or by hand. Once all flour is added, knead for 5 minutes on medium-low or 10 min by hand. 

  4. Remove the dough from the bowl and add coconut oil. Turn to coat the entire dough ball and cover the bowl with a silicone cover or damp towel. Let rise in a warm place for 1 hour until doubled in size. 

  5. After the hour, punch down the dough and allow to rise for another 30-60 min. 

  6. Add the strawberries to a blender or food processor and blend until completely smooth. Add powdered sugar, salt, corn syrup, and heavy cream to the bowl of the stand mixer. Blend with the whisk attachment. Slowly drizzle in the strawberry purée until a thick, smooth icing forms. Be careful not to add too much liquid. Set aside in a small shallow bowl for dipping. 

  7. While the dough is rising, cut out 4" squares of parchment paper. Heat vegetable oil to 350 degrees. 

  8. Pour out the dough onto a floured surface. Roll to 3/4" thick. Use a small bowl or 3" diameter glass and a shot glass to cut out doughnut shapes. 

  9. Set onto parchment paper squares on a baking sheet. Use the squares to gently flip the doughnuts into the oil. Cook for about 1 minute per side. Remove to a baking sheet with a rack to drain. While still warm, dip one side of the doughnuts into the strawberry glaze. Dip twice if needed. Top with sprinkles if desired & enjoy warm.
